You Will Loaf this Paleo Bread!



Paleo Bread

I love this Paleo Bread recipe because all you have to do is add everything to a food processor to make the batter - so easy!

Hands-On Time: 15 minutes

Cooking Time: 40-45 minutes

Ingredients:
  • Organic, Pasture-Raised Eggs (x4)
  • Home-Made Ghee (x1/2 C, melted)
  • Organic, Raw Honey (x2 TBSP)
  • Organic Apple Cider Vinegar (x2 tsp)
  • Organic Coconut Flour (x1/2 C)
  • Baking Soda (x1 tsp)
  • Himalayan Sea Salt (x1/2 tsp)
  • Chosen Foods Avocado Oil (to grease the bread pan)

Pre-heat your oven to 300 degrees Fahrenheit:


Start by adding your eggs to the food processor:


Then add your home-made ghee:


Add your honey:


Then add your apple cider vinegar:


Add your coconut flour:


Add your baking soda:


And, finally, add your salt:


Turn on your food processor and process until all of your ingredients are combined fully:


Grease your bread pan with a little bit of avocado oil:



Using a spatula, pour your batter into the greased loaf pan:


Place your bread pan in the oven and bake for 40-45 minutes:


Remove your bread pan from the oven and cool before serving:


Enjoy as a breakfast treat with some Paleo jam or a pat of home-made ghee!

Ghee: the Perfect Paleo Substitute for Butter!


Home-Made Ghee

Ghee is so easy to make and it's the perfect Paleo substitute for butter! It's made from butter, but because you bake out the casein (dairy), it's well-tolerated by most people, even those who are sensitive to dairy. 

Hands-On Time: 5 minutes

Cooking Time: 45 minutes

Ingredients:
  • Organic Butter from Pasture-Raised Cows (x2 sticks or 1 C)

Pre-heat your oven to 250 degrees Fahrenheit:


Place the butter in a glass baking dish and bake in the oven for 45 minutes:


Carefully remove the dish out from the oven and pour the golden liquid (the ghee) into a separate glass container, making sure the white crust on the top and the white liquid at the bottom stays in the baking dish while you pour:



Discard the white liquid and store the ghee in a glass container in the refrigerator:

When I walked into KitchenTown this Saturday to start setting up for my Paleo Cooking Bootcamp class on Sunday, I ran into one of the owners of KitchenTown, Alberto, who pointed down to a magazine sitting on one of the tables and asked, 

[Alberto] "Did you see that?!" 
[Me] "What?"
[Alberto] "Oh, you've got to see this!" (smirking)
[Me] "OH MY ... !!" (shrieking)

Here's what I read:

"This San Mateo startup has the one thing every home cook with a pinch of ambition dreams of: a shiny, state-of-the-art kitchen in which to hone one's chops. The 10,000 square foot space is the back drop to a rotating roster of classes: sushi rolling, pie baking, and organic baby food workshop. Classes are taught by local chefs and food celebs, like paleo guru Katie Kuiter, who's bootcamp gives students a week's worth of fresh food to take home to their tiny kitchens."

It is beyond my wildest dreams to receive this kind of recognition in such a prestigious magazine! I am truly honored and humbled to have the opportunity to make the Paleo lifestyle more accessible to busy families and individuals.
